I Tried It: Gwyneth Paltrow's Goop.com Blueberry Salad

I recently made a recipe that was light, refreshing, healthy, and not lacking in any flavor whatsoever. Can you guess what celebrity's name is behind the goods that I was able to enjoy on a sunny Sunday afternoon?

Trusting Gwyneth Paltrow with healthy recipe insight is as easy as believing that Rachel Zoe is going to dress a celebrity well for a red carpet. It's just something that makes sense in this world. If you guessed this girl, you were heading in the correct direction. And now that Gwyneth has ventured into her second cookbook byline, she's basically an authority of fresh eating.

Gwyneth is the founder and editor-in-chief of Goop.com, a website that specializes in recipes, shopping, lifestyle interests, and pretty much anything else that would make you think of the talented Gwyneth. It's been around for a while, but I love it more than ever.

I trust Gwyneth's opinion on food, and if she runs this website, I could only imagine the best showing up. I checked out Goop.com and came across a Blueberry Salad with eye-candy illustrations. And for those of you that hate the whole baking/timer thing, you'll be pleased to know that it takes zero oven time.

The Goop.com Blueberry Salad is made with blueberries, fennel, shaved ricotta cheese, mint and a couple of other seasonings and flavors that you probably have in your cabinets or produce bowls. I'm not going to lie—I thought that fennel, ricotta cheese, and blueberries together sounded less than desirable, but that was before I tried it. My illustration doesn't look as artsy as her's, but hey, I have to work on my food presentation.

I would describe it as bikini beach food. I could eat this and totally not feel bad about being in a bathing suit a couple of minutes later. 

Turns out, I'm not the only one that's a fan of the celebrity's website. Twitter fan Jennifer @snowsquirrel7 is a fan of Goop.com's Grilled Halibut with Mango-Avocado salsa, saying it was the "perfect dinner for the upcoming Spring and Summer months." 

As a self-proclaimed foodie, I wouldn't mind giving that one a try too.
