Travis London is all about eating and living well — the healthy and chic way — and every week, he shares tips and recipes right here on OKmagazine.com. This week, Travis shares his recipe for Grandma's Style Sweet Potato Enchiladas."This recipe is a healthy twist on my grandmother's famous enchiladas," Travis tells OK!. "Instead of the traditional pork, I substituted sweet potatoes to make sure these enchiladas are a healthy treat you won't want to miss."

TRAVIS LONDON'S HEALTHY CHIC EAT OF THE WEEK — PASTA WITH BUTTERNUT SQUASH SAUCE

Grandma's Style Sweet Potato Enchiladas

(Serves 6-8)

Ingredients:

1 (14 oz) can black beans, rinsed, drained

1 cup frozen corn kennels, thawed

1/2 red onion, diced

2 large sweet potatoes

1 teaspoon chili powder

2 teaspoons ground cumin

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon ground black pepper 6-8 flour tortillas

1 (10 oz) can enchiladas sauce

1 cup mixed Mexican cheese blend

2 green onions, chopped

Directions:

1. Heat oven to 400F.

2. Peel sweet potatoes, cut into cubes, and toss with salt. Place in a deep baking dish and roast for 30 minutes or until tender. When done, let cool for 5 minutes.

3. Place roasted sweet potatoes in a bowl and using a fork slightly smash. Add diced onions, black beans, corn kennels and toss to combine.

4. Place tortillas in the microwave for 25 seconds to warm, making folding easier. Dip each tortilla in enchiladas sauce and fill evenly with sweet potato mixture, fold, and place in deep baking dish. Top with remaining enchiladas sauce and sprinkle cheese over. Place in oven and bake for 15 minutes. Serve immediately.

Healthy Fact: Sweet potatoes are a very good source of vitamin c and b6.

Chic Tip: For a chicer presentation when serving, sprinkle chopped green onions on top.
