Heres how to do it:

"Mix together approximately 2 cloves garlic, 6 to 8 tbl. olive oil, 1 tsp. each of basil, salt, black pepper.  2 tbls. each of lemon juice and parsley. Let set in frig approximately 1 to 2 hrs.  Pour over 2 salmon fillets and bake for 375 degrees until it flakes.  Approximately 45 minutes," she told us.

"I serve with Spinach salad.  It's a great combination."

For a side, Lea whips up a fruit salad, which her son loves and even helps her prepare.

"RJ and I make this together every year. So simple and yet so good!"

She combines the following for her recipe:

1 cup pineapple tidbits, 1 cup Mandarin oranges, 1 cup miniature marshmallows, 1 cup coconut, 1 cup sour cream.

"You can add Maraschino cherries for color.  It's delicious, healthy and light," she said.
