Hawaiian Hummus Chicken Salad Stuffed Tomatoes
4 large beefsteak tomatoes
1 cup diced grilled chicken
1/2 cup diced fresh pineapple
1/4 cup chopped celery
2 tablespoons finely chopped red onion
2 tablespoons sliced almonds
1/2 cup Sabra® Hummus
• Cut 1/2inch from top of tomato and scoop out pulp. Place tomatoes on paper towels, upside down to drain.
• In a medium bowl, combine remaining ingredients.
• Fill tomatoes with chicken salad and place on bed of shredded lettuce.
