The Mexican-American singer loves to cook, and tends toward traditional Mexican fare. "Everybody can do enchiladas!" she says. Her fave is a basic red enchilada. "It’s chicken, cheese, tortillas, dip them in some red tomato sauce, and put some cheese on it." How to add a little something special?
"What I like to do is lightly dip the tortillas in oil so they get a little crunchy, and then rolling them up with the chicken and the cheese in them," Becky explains. "Then put cheese over the enchiladas and put them in the oven so they get really warm with some crispness to it. It keeps them from getting soggy." Yummy!
