I really feel like I have the best job in the world.
As creator, producer, and host of my own restaurant show in New York City, and as host of Top Chef Masters, I get to rejoice in and celebrate two things that make me most happy in life: Good food and the wonderful people to enjoy that food with.
Being host of Top Chef Masters, I get to sample some of the world’s most amazing edibles cooked by elite chefs from around the world. And because of the nature of my work, people are constantly asking me, “How is it that you’re so skinny?”
Well, for the record, I don’t consider myself skinny. I have a small frame, for sure, and I might look like I weigh 50 pounds. But when I hear the word skinny, I think gaunt and bony looking, and I’m not that. I’m thin, absolutely, I know that. It’s something I was born with, just like I was born with brown eyes and black hair. I believe that I have a very realistic perspective about how I look, and all I know is, Thank you, God, for giving me a strong and healthy body with which to try and taste all the absolutely incredible foods that come across my plate and into my mouth. Whatever you want to call how I look doing that, then that’s your label, not mine.
Remember this Golden Rule: Eating delicious food doesn’t mean gorging. And in my humble opinion, a true lover of excellent cuisine – whether it’s a simple grilled cheese sandwich or a creamy, silky foie gras terrine – appreciates where the meal came from, as well as what it took to make it.
I’ve noticed one thing as I come across different people and what they consider to be good foods to eat. And I’m speaking of, particularly, women. Ladies, you are making one dire mistake that’s making you look older, making you obsess about calories, and probably making you a tad unhappier than you might normally be. What is it?
You’re not eating enough fat.
Fat is what makes you full, it’s what makes a meal satisfying and tasty. Fat gives you energy. Fat is what fills out creases on your face, what gives you feminine curves, and what makes your hair shine and your nails sturdy.
I’m not saying go eat 10 pieces of bacon right now. What I’m saying is that it truly pains me when I see women who, come meal time, don’t dare drizzle olive oil on their salads or never enjoy a bite of cake, or who read every single label like a detective. If you don’t like that to begin with, then that’s another story. But there are quite a lot of gals walking around out there who, you just take one look, and you know that they’re crazy obsessed with exercising and overly diligent about making sure they never swallow anything that has more than a few hundred calories in on meal.
Of course, we have to be aware of and accountable for what we put into our mouths. Part of the issue of rising rates of obesity in this country is that we like to blame others for making us fat (that’s a whole other piece to be reckoned with).
But omitting a key ingredient to enjoying what makes a dish truly tasty is, in my opinion, a shame.
Don’t overdo it. Just enjoy it!
