Feta and Olive Oil Cakes
Ingredients:
5.30 ounces feta cheese
¾ cup powdered sugar
2 ¼ Tbsp. honey
½ cup Cat Cora's Kitchen DOP Kalamata (Sitia) extra virgin olive oil
1 cup all purpose flour
3.50 ounces ground almonds
1 tsp. baking powder
Cat Cora's Kitchen pitted Kalamata olives, cut in half

Directions: Preheat oven to 347 degrees Fahrenheit. Process the cheese with the sugar and honey in a mixer until the mixture is smooth. Add the olive oil. Next, combine flour with the ground almonds and baking powder. Add this to bowl while you're mixing. Divide batter among six greased one-use individual cake molds and top each with half an olive. Sprinkle the top of the batter with brown sugar and bake for about 25 minutes.

Avocado Tzatziki
Ingredients:
1 tablespoon fresh lemon juice
½ cup Cat Cora’s Kitchen By Gaea Extra Virgin Olive Oil
1 teaspoon minced garlic (about 1 large clove)
1 teaspoon kosher salt
2 cups plain yogurt (or low-fat)
1 cup peeled, seeded and grated cucumber (about 1 medium cucumber)
1 whole peeled avocado, diced small

Directions: Add lemon juice, olive oil, garlic and salt to the yogurt. Next, add the grated cucumber, diced avocado and then mix well. Chill this for at least one hour.
Olive Oil Cake with Chocolate Flakes
Ingredients:
½ cup Cat Cora’s Kitchen by Gaea Kalamata D.O.P Extra Virgin Olive Oil
½ cup. cream
½ cup confectioner’s sugar
2 large eggs
1 tbsp rum
1 cup flour
1 tsp. baking powder
3 ½ ounce. Valhrona chocolate flakes
Directions: Mix the olive oil, cream, sugar, eggs, and rum in a large bowl. Next, sift together the flour and baking powder. Add this to the mixture and mix well. The next step is to add the chocolate flakes and mix. Oil a 10-inch round baking pan and then sprinkle the bottom and sides with sugar. Bake the recipe in a preheated oven at 356 degrees for five minutes. Reduce the oven temperature to 302 degrees and continue baking for 1 ½ hours. Finally, remove from the oven and allow cooling.
