Kimberley Locke Dishes About Her New Restaurant

She’s best known for belting out songs, but these days
Kimberley Locke can be called a restaurateur as well.
Along with her business partner, the former American Idol contestant opened her own restaurant earlier this year
dubbed Croton Creek, after its location, Croton
Falls, N.Y., and talks to OK! about her favorite meals.
“One of my favorite dishes is the salmon,” Kimberley tells OK!. “It’s done over a bed of
asparagus with a mushroom porcini crust.”
Sounds delicious — and even more so if ordered with the
topping. But since shedding 40 pounds through her stint on Celebrity Fit Club
and with Jenny Craig — for which she’s a spokesperson — Kimberley has learned to control her urges.
“It’s okay to say, ‘I don’t want the topping, and I want my
veggies steamed, not sautéed,” the 29-year-old says. “You’ll still get a great

dining experience.”
The AI judges would surely get one should they stroll
through Croton Creek’s doors — well, maybe just two of them.
“I’d serve Randy Jackson
a big steak, Paula Abdul would probably have our shrimp and lobster salad,
and we’d take Simon Cowell out back and give him the scraps!” Kimberley jokes.
