“Make pancakes healthier with my recipe for Deliciously Healthy Whole-Wheat Pumpkin Yogurt Pancakes. These pancakes are not only half the calories of those made with buttermilk, but they aren't full of saturated fat, sugar, or processed flour as found in traditional pancakes.
Deliciously Healthy Whole-Wheat Pumpkin Yogurt Pancakes Serves 4
Ingredients:
• 1/2 cup canned pumpkin puree
• 1/2 cup low-fat vanilla yogurt
• 1/4 tsp. baking soda
• 1 tsp. cinnamon
• 1/2 tsp, ground nutmeg
• 1/2 tsp. ground ginger
• 1 large egg yolk
• 1/2 cup whole-wheat flour
• 1/2 Tbs. Splenda brown sugar
• 4 egg whites
• 1/4 tsp. salt
Directions:Put all of the ingredients in a blender and blend until smooth. Overmedium heat, heat a griddle or large skillet lightly coat with cooking spray.

To make each pancake, add 1/4 cup of batter mixture to griddle or skillet and use the back of a spoon to spread into an even circle. Cook for 1-3 minutes on each side until browned and cooked through. Transfer to a baking sheet and keep in preheated oven to keep warm while making desired amount of pancakes.
Chic Tip: Use a cookie cutter to make different shapes out of the pancake and top each serving with a spoonful ofwild organic berries.
Healthy Fact: Pumpkin contains beta-carotene which helps aid in reducing the risk of certain type of cancers and protecting against heart disease.
