TRAVIS LONDON'S HEALTHY CHIC EAT OF THE WEEK — SUMMER ENTICEMENT MANGO SALAD!

SUMMER CHIC GOAT CHEESE AND MANGO QUESADILLAS

Serves 8

Ingredients:

1 large ripe mango, pilled, seeded, thinly sliced

1 organic jalapeno pepper, thinly sliced

1/2 small organic red onion, thinly sliced

1/3 cup fresh cilantro leaves

4 ounces goat cheese, at room temperature

6 (6-inch) whole wheat tortillas

Directions:

In a mixing bowl, gently toss mango, jalapeno pepper, and onion slices with cilantro leaves. Sprinkle goat cheese evenly among each tortilla and divide mango mixture evenly to one side of each tortilla and fold in half.

Over medium-high heat, heat a large skillet. Place quesadillas on skillet and cook on each side for 1-2 minutes until cheese softens and melts and quesadilla begins to crisp.

Chic Tip: For a chicer presentation when serving, place quesadillas on cutting board and cut into four wedges each.
