Mangoes are not only high in fiber, but are virtually fat free — so go ahead and indulge with my Spring Mango Almond Parfait. Experience a taste of the tropics without ever leaving your kitchen,” Travis tells OK!.
SWEETLY IN SPRING MANGO ALMOND PARFAIT
Serves 4
Ingredients:
3 mangoes, peeled, halved, pitted, diced
1 12-ounce container of fresh yogurt
1 cup sliced almonds
1 cup crushed graham crackers crumbs

TRAVIS LONDON'S HEALTHY CHIC EAT OF THE WEEK: QUINTESENTIALLY SPRING ROASTED CAPRESE SALAD
Directions:
In a parfait glass, layer a tablespoon of yogurt, followed by diced mango, layer a spoonful of crumbs and then another tablespoon of yogurt topped with a teaspoon of sliced almonds. Continue alternating layers of mango, crumbs and almonds with the yogurt. Do this in four separate parfait glasses.
Chic Tip: For a chicer presentation when serving, serve topped with a mint sprig and a cherry.
Healthy Fact: Mangoes have been shown to offer some protection against infections.
