Check Out Celebrity Chef Edward Lee’s Mushroom Patty Melt Sandwich!

Treat yourself (and your body!) with a meal fit for a star with celebrity chef Edward Lee’s Mushroom Patty Melt Sandwich! With ingredients like Arnold's Healthfull bread, eggplant and black beans, this meal will taste as good as you feel!

Mushroom Patty Melt Sandwich

4 Servings

Ingredients

  • 10 slices of Healthfull® Steelcut Oats and Honey bread
  • 1 tsp. olive oil
  • ½ c. onion, chopped
  • ½ c. skinless eggplant, diced
  • 8 oz. button mushrooms, diced
  • 1 c. cooked black beans, drained of liquid
  • 1 oz. roasted cashews
  • 2 tsp. soy sauce
  • 1 tsp. mayonnaise
  • 1 tsp. Dijon mustard
  • Salt and pepper to taste
  • 1 egg yolk

Garnish:

  • 4 slices white cheddar cheese
  • 1 avocado, thinly sliced
  • ¼ c. pickled banana peppers
  • Ketchup optional

Directions

Toast the bread slices and reserve 8 slices for sandwiches.  Take the remaining 2 slices and crumble into a food processor*.

In a large skillet, heat olive oil over medium low heat.  Add the onions, eggplant, mushrooms, black beans and cashews and cook slowly stirring constantly until the vegetables have wilted and all the liquid has cooked off, about 10 – 12 minutes.

Add the soy sauce, mayonnaise, mustard, salt and pepper.  Cook for another 2 minutes, turn off the heat and let cool in the pan for 5 minutes.

Transfer the contents of the pan to the food processor with the crumbled bread.  Add the egg yolk and pulse until combined.  Take mixture and mold into 4 patties.

Heat a pan with a little olive oil and cook patties until crispy, about 2 minutes on both sides.  Add a slice of cheddar cheese to each patty while still cooking in the pan.

Transfer the patty melt to a slice of toasted Healthfull® bread.  Top with avocado slices and banana peppers.  Top with another slice of Healthfull® bread and serve immediately with a side of ketchup or mayonnaise.

*If you don’t have a food processor, simply add contents into a large bowl and knead everything with your hands until formed.
