I Made a Celeb Recipe: Bethenny Frankel's Banana Bread

March 25 2013, Published 6:40 a.m. ET
I'm a breakfast kind of girl. It's my favorite meal of the day.
Adding in the fact that mornings are my very favorite time of the day, my fondness for breakfast is understandable. 'The early bird catches the worm' has some meaning behind it, you know. I would hate to miss a good breakfast.
Bethenny Frankel's banana bread recipe has been floating around in my brain for a little while now. I came across the recipe when I was in the process of making her Not-So-Red-Velvet Cupcakes. My resistance to eating baked goods was evaporating, leaving me only one respectable thing to do. I had to make some of this bread. My breakfast for the week was set.

I really want to know the detailed story on how Bethenny became such a recipe genius. You don't need to scroll down the end of this post to know that I'm in food heaven and have been since I pulled the bread out of the oven. I packed an extra piece for lunch today and had to stop myself from chowing down on it as soon as I sat at my desk. The best part is that her bread is more properly named, Bethenny's Boo Boo Banana Bread.

The consistency wasn't gooey and chewy, but it wasn't dry either. It was a happy medium of textures and tastes. It only took me about 15 minutes to combine all the ingredients, mix it up and put it into the oven. Bethenny's recipe says that it takes about 50 minutes combined to cook and was really accurate.

By the way, the flavors were explosive. This bread is a done deal. I may need to fit in another run this week to make myself feel better about my portion size. Notice the two slices?
