Tantalizingly Familiar Roasted Sweet Potato Fries

(Serves 4)

Ingredients:

2 large organic sweet potatoes, peeled

1 Tbs canola oil

1 Tbs chili powder

Directions:

Line a baking sheet with aluminum foil and preheat oven to 425 degrees. Cut sweet potatoes in half and cut four to five slices from each; then cut each slice in half. In a mixing bowl toss sweet potato slices with oil and chili powder. Place on prepared baking sheet and bake for 30 minutes, turning pan throughout the cooking process so the potatoes brown evenly.
