Travis London's Healthy Chic Eat of the Week

Travis London is all about eating and living well — the healthy and chic way — and now, each week he’ll be sharing tips and recipes right here on OKmagazine.com. This week, Travis shares his recipe for a vegetarian panini!

GRILLED CHEDDAR & APPLE VEGETARIAN PANINI
(Makes 4)
Ingredients:
8 slices sprouted whole grain bread
1/2 cup low-fat honey mustard
2 tbsp. red pepper flakes
1 large red onion, sliced thin
8 oz. low-fat cheddar cheese, sliced thin
2 large organic green apples, sliced thin
1 tbsp. olive oil
Directions:
1. Preheat panini press or grill pan.
2. Lay bread out and lightly brush honey mustard evenly over each slice of bread, and sprinkle with red pepper flakes.
3. Layer equal parts red onion, cheese and apple slices over four slices of bread. Top with the other four slices of bread.

4. Lightly brush olive oil over top bread slices and grill each sandwich on panini grill for 3-5 minutes until cheese starts to melt and bread has toasted. (If using grill pan: Grill for 3 minutes on each side, flipping until cheese is melted and both sides have browned. Use a heavy skillet to press down as they are cooking.)

Keep it Chic: To serve, you can use a cookie cutter and cut shapes into the panini.
