Just in time for back to school, Lizzie shares her Pretzel Hand Pies (in three varieties) that taste just as yummy as they sound.

Pretzel Hand Pies

(S'mores , PB&J , Brie and Jam)

1 1/2c warm water

2 tbsp sugar (split)

1 pk dry yeast

3 1/2 c flour (all-purpose)

1 egg

Course sea salt

Directions:

1. In a standing mixer bowl, combine warm water, 1 tbsp sugar and yeast. Let sit until mixture becomes foamy. If it doesn't foam, the yeast is dead. Dispose of it and start with a new pack of yeast.

2. Place bowl on mixer with whisk attachment . While on medium speed slowly add flour and sugar. Mix until a shaggy dough forms.

3. Remove whisk attachment and replace with dough hook. Mix on medium speed for 6-8 minutes. If you don't have a mixer, work with hands for 8 minutes.

4. Place dough in large bowl and cover tightly with plastic to proof and double in size. In 45 minutes - 1 hour, punch down dough.

5. On lightly floured surface, roll dough out 1/4-inch thick. Use a large cookie cutter or large cup to cut out rounds.

6. Take two rounds and place together to form a pocket. Fill the center (don't over fill) with fillings of your choice:

- a spoonful of marshmallow creme, chocolate chips and cream cheese

- a spoonful of jam and a slice of Brie

- peanut butter and jelly

7. Using a fork, press the seams of dough together to seal in filling.

8. Boil a large pot of water (about 10 cups) and add 2/3 cup baking soda.

9. Slowly add pies to boiling water, a couple at a time. Boil 30 seconds and remove with a slotted spoon.

10. Place pies on a baking sheet with parchment or a silpat. Make sure they are spread apart. Brush with egg wash and sprinkle with salt.

11. Bake at 400 degrees for 12-15 minute or until golden brown. Remove and slightly cool before serving.
