Delightfully Summer Mango and Melon Salsa with Baked Chips

(Serves Eight)

Salsa

Ingredients:

2 mangoes, peeled, cut into small cubes

1 kiwi fruit, peeled, cut into small diced pieces

1/2 cantaloupe, seeded, cut into small diced pieces

1/2 organic red bell pepper, finely chopped

1 small organic jalapeno pepper, finely chopped

2 tbs. organic lemon juice

1 tbs. balsamic vinegar

2 tbs. extra virgin olive oil

Kosher salt and pepper to taste

Directions:

Combine all ingredients in a mixing bowl and toss well. Place in refrigerator to chill for up to 2 hours.

Chips

Ingredients:

4 whole-wheat flour tortillas, 8-inch size, cut into 8 wedges

Extra virgin olive oil

Directions:

Preheat oven to 350F degrees. Arrange tortilla wedges in a single layer on a baking sheet. Brush with oil on both sides and place in oven until crisp and golden brown (2-3 minutes per side). Transfer to a wire rack or paper-towel lined sheet tray to drain and let cool.

Tasty Tip: For a more salsa-like consistency, before chilling salsa you can pulse it a few times in a food processor or blender before chilling in the fridge.
